I thought of making this because of the nice looking brussel sprouts from the grocery store. They looked real fresh so I thought of making something out of them. We always stock a few pounds of bacon in the freezer. I was thinking that the salty taste of bacon will mingle well with the vegetables – it actually did. The result was a superb dish with a balanced flavor and nice crisp texture.
This dish goes well as an appetizer or even a side for chicken, fish, and other dishes. You can also do this even if you are a vegetarian, just omit the bacon and its good to go. For those who have not tried brussel sprouts yet, you don’t know what you’re missing.
